One staple of Hawaiian luaus is Lomi Lomi Salmon. The classic recipe combines raw salmon, minced tomatoes, onions and coarse salt, and has a flavor like mild salsa. The term Lomi Lomi is Hawaiian for massage.
This easy shortcut recipe streamlines the process, using two readily available supermarket ingredients available nationwide while still maintaining the delicious island flavor.
For this version you'll need one package Nova salmon, available in your refrigerator case, and one container of fresh mild salsa, also from the deli cold case.
Mince the salmon and reserve. Measure one cup of the fresh salsa and drain in a colander. Combine the salmon and salsa and toss well.
Serve in a small decorative bowl, placed over a bed of crushed ice. There is no need to add salt as the Nova comes prepared.
Makes an excellent appetizer for your own backyard luau or Hawaiian themed event, and will serve 6 to 8.
