2 lb. ground beef
2 eggs
1 tsp. chpped onion
1/2 cup bread crumbs
2 sprigs parsley, chopped
1/4 cup grated Parmesan or Romano cheese
1 jar tomato sauce
salt and pepper
Combine ingredients, except sauce and mix. With hands, shape into balls about the size of an egg. Place in frying pan with 1/4 cup salad oil and brown over medium flame. Remove and put into tomato sauce, which has been heated to boiling. Simmer meat balls in sauce uncovered until well done, about 2-1/2 hours. Serve with pasta and pour sauce over both.
