1 3-pound chicken, split for broiling
1/2 teaspoon black pepper
1/2 teaspoon thyme
1 tablespoon olive oil
3 tablespoons Dijon mustard
1 tablespoon red wine vinegar
4 tablespoons fresh bread crumbs
Preheat the broiler.
Sprinkle the chicken with salt, pepper and thyme and brush it all over with olive oil.
Place the chicken skin side up in a broiling pan, 4 to 5 inches from the source of heat and broil for 4 to 5 minutes, until golden brown. Turn the chicken and broil the other side for the same length of time.
Blend the mustard and vinegar. Brush both sides of the chicken and sprinkle it evenly with bread crumbs.
Turn the oven temperature down to 400 degrees and place the
chicken on the bottom shelf of the oven to bake for 15 or 20 minutes, until done.
