An easy to make warm lunch recipe incorporating beets and cream cheese; done in 15 minutes. The taste is surprisingly hearty and good for a dish made from that traditional scapegoat: beets. A vegetarian recipe. This dish serves 4.
INGREDIENTS:
1 cup canned beets, thinly sliced
4 oz. cream cheese
1 tsp. salt
1 tsp. black pepper
8 large plain pitas
METHOD:
Preheat oven to 400 F (200 C). Season beets. Spread cream cheese on one side of inside of each pita. Add beets and roll up pitas like cigars.
Wrap each pita roll in foil and bake for 10 minutes until soft inside and slightly crisp on the outside. Serve hot or cold with a light salad and a meaty soup.
